Made in the Chablis
Style, our 2008
Chardonnay is
not an oaky buttery
California chardonnay.
Ours is a light, crisp,
and creamy white
wine with delicate
tropical flavors.
Fermented in neutral
oak barrels and aged
for 8 months before
bottling. Our 2008
Chardonay pairs well
with seafood, like
dover sole or crab,
pork and poultry.
Chardonnay pairs with
Gouda, greyere and
havarti cheeses.

Our 2007 Viognier was
barrel aged for 8
months in light oak
only to accentuate
the body and its
natural flavors
of peach, honey-
suckle, and pears.
With a medium
body and higher
acidity our 2007
Viognier graciously
complements a wide
variety of meals such
as pastas, poultry,
seafood’s, smoked
salmon, and light grill.
Viognier pairs well
with bleu cheese,
Tourmalet or
lemony feta.

Our 2008 Norton
was whole cluster
pressed emphasizing
the intense berry
flavors this varietal
has to offer. Barrel
aged for 10 months
our 2007 Norton has
retained an excellent
crispness along with
a medium body allowing
it to be paired with
a wide variety of meals
that are mild to
moderate spicy such
as pastas, poultry,
seafood, and light grill.
Norton pairs well with
Camembert, brie and
cheddar cheese.
The Norton may also
be served chilled.

Our 2007 Merlot
exhibits the intense
berry, smoky flavor
that great Merlots
are known for.
Barrel aged for 10
months, our soft and
velvety medium-bodied
Merlot complements a
wide variety of meals
such as Chinese or
Indian cuisine, fish,
chicken, turkey, and
pork. Merlot pairs well
with brie, swiss, and

Sauvignon exhibits
profound berry and
earthy flavors. Barrel aged
for 10 months, our
smooth and medium embodied Cabernet
Sauvignon complements
a wide variety of meals
such as grilled roasted
red meat, rare tuna,
duck, lamb, roast
chicken, and wild game. Cabernet Sauvignon
pairs well with dark
chocolate, Camembert,
Gouda, and Pecorino
